It is always so refreshing to see plants coming up in the garden and around our house in the spring. This year, spring has been elusive, so the sight of bright, green leaves is extra refreshing! In the lifestyle section of the blog, I showed a picture of our rhubarb and said I would share an easy way to preserve rhubarb, that happens to be healthy and delicious!

Here's how I preserve extra rhubarb and am able to bake up wonderful rhubarb delights in December. This is an extremely easy, 5-step process with only 2-ingredients needed!
Gather your rhubarb - from your garden, your favorite farmer's market, or food co-op (you get the idea)
Clean and wash the rhubarb - *remember to toss out the leaves - they're poisonous! *
Dice the rhubarb into 1" slices
Place the diced rhubarb into a gallon plastic bag
Cover the rhubarb completely with 100% apple juice and put it in the freezer
Then, when you want to have fresh rhubarb, you take it out of the freezer and place the opened bag in a strainer in the sink. As the contents of the bag thaw, the apple juice runs down the drain leaving only the rhubarb in the strainer! Proceed with the recipe you want to make!
